Food critics, food trends, foodies, and even wine enthusiast say it’s time to taste vinegar as you would a fine wine. Exotic vinegars are popping up on the shelves of specialty stores, gourmet kitchens, seafood markets, bakeries, behind bars, and in consumers glasses.  Additionally, artisan vinegars are considered a Chefs best friend, in addition to their “Secret weapon-ingredient”. Our vinegars will add depth in flavor to any dish. The flavor profiles are unique and unlike any. The flavors are ghost-like to most folks. Their tastebuds simpley reply “What in the……” Each bottle is packed with flavor. We retain texture and pulp through limited filtering.  This process helps our vinegar continue to age, and further develop its flavor in your hands.

  It takes time to ferment most fruits & and vegetables into vinegars, months, which is how the flavor profiles are so rich and defined.  We use regional seasonal fruits and vegetables in addition French red/white wine, and champaign. Selection at the peak of ripeness is a key factor in making fantastic vinegar. These artisan vinegars are a true taste of Montana and the Rocky Mountains. Just a few drips will be enough to get you hooked!
